the name depends on which service ure trying to use I mean the incoming is either pop(something) or imap(something) and the outgoing is smtp(something)
too bad u didn't say what service ure using, there isn't a 'global in and out server'
some examples would be :
imap.aol.com - smtp.aol.com
imap.gmail.com - smtp.gmail.com
imap.att.net - smtp.att.net
pop.mail.yahoo.com - smtp.mail.yahoo.com
and so on...
